Ingredients
  

  • 1½ cups creamy peanut butter I love Skippy Natural or Justin’s
  • ½ cup unsalted butter room temperature (or coconut oil for dairy-free)
  • 2 cups powdered sugar sifted
  • 1 teaspoon pure vanilla extract
  • 8 ounces semi-sweet chocolate chips Ghirardelli recommended
  • 2 tablespoons coconut oil helps the chocolate set smoothly
  • Festive sprinkles or mini candy corn for garnish (optional)

Instructions
 

  • Line an 8×8-inch baking dish with parchment paper, leaving a 1-inch overhang on two sides—this makes lifting out the bars a breeze.
  • Beat the peanut butter and softened butter with an electric mixer, then add vanilla and gradually beat in powdered sugar until thick and smooth.
  • Scoop the peanut butter mixture into the lined dish and press down firmly to create an even layer.
  • Pop the pan into the fridge for 30–35 minutes to allow the base to solidify.
  • Combine chocolate chips and coconut oil in a microwave-safe bowl, heat in 20-second bursts, stirring until smooth.
  • Pour the melted chocolate over the peanut butter slab and spread in a thin layer. Sprinkle with festive toppings.
  • Return to the fridge for another 10–15 minutes until the chocolate is firm.
  • Cut into 16–20 bars with a sharp knife. Enjoy the Halloween Peanut Butter Bars!

Notes

Store these peanut butter bars in an airtight container in the fridge for up to 7 days. Freeze uncut bars for longer storage. Customize with different toppings for a festive touch!
