Ingredients
  

  • 1 pound lean ground beef
  • 5 cups green cabbage shredded or chopped
  • 1/4 cup low-carb taco seasoning
  • 1 tablespoon dry minced onion
  • 1/4 cup water
  • 1 1/2 cups shredded cheddar cheese

Instructions
 

  • Heat a large skillet over medium-high heat. Add the lean ground beef and cook until browned, breaking it up into small crumbles, about 5-7 minutes. Drain excess fat if needed.
  • Stir in the shredded or chopped cabbage until evenly combined with the beef. Add the taco seasoning and dry minced onion, then pour in the water. Cook and stir for 5-10 minutes until the cabbage is crisp-tender.
  • Sprinkle shredded cheddar cheese over the top. Cover the skillet and cook for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  • Serve hot, directly from the skillet.

Notes

For added flavor, top with fresh cilantro or a dollop of sour cream.
