Ingredients
  

  • 2 cups all-purpose flour about 250 g
  • 1/2 cup unsweetened cocoa powder about 50 g
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened (or plant-based)
  • 1 cup granulated sugar
  • 1 large egg or flax egg substitute
  • 1 teaspoon vanilla extract
  • Green gel food coloring 5–8 drops, adjust to shade
  • 1/2 cup powdered sugar for rolling

Instructions
 

  • Whisk flour, cocoa powder, baking powder, and salt in a medium bowl until combined.
  • Beat softened butter and granulated sugar on medium speed for about 2 minutes until pale and fluffy.
  • Mix in the egg (or flax egg), vanilla extract, and green gel coloring until the dough is evenly green.
  • Fold the dry mixture into the wet ingredients until just combined, forming a soft dough.
  • Cover and refrigerate the dough for at least 30 minutes to prevent excessive spreading.
  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop 1½-tablespoon balls, roll in powdered sugar, and place 2 inches apart on the sheet.
  • Bake 12–14 minutes until edges set and tops crackle, then cool on the sheet 5 minutes.
  • Transfer cookies to a wire rack and let them cool fully before storing or serving.

Notes

For a bolder green, add extra gel coloring drop by drop. Dough can chill up to 24 hours—flavor improves with time.
