Golden Fried Catfish

Ingredients
  

  • 1/2 cup milk
  • 1/2 cup water
  • salt and pepper to taste
  • 1 pound catfish fillets sliced
  • 1 cup fine cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon seafood seasoning (such as Old Bay™)
  • 1 liter vegetable oil for frying

Instructions
 

  • In a small bowl, mix milk, water, salt, and pepper. Pour into a flat pan and lay catfish fillets in a single layer, turning to coat both sides. Set aside.
  • In a resealable plastic bag, combine cornmeal, flour, and seafood seasoning. Add marinated fillets in batches, seal, and shake to coat.
  • Pour vegetable oil into a deep fryer or skillet. Heat to 365°F (185°C).
  • Fry fillets in hot oil, 3 minutes per side, until golden brown. Drain on paper towels.
  • Serve hot with lemon wedges and tartar sauce. Enjoy!

Notes

For a spicier kick, add cayenne pepper to the cornmeal mixture.
