Ingredients
  

  • 1 lb large shrimp peeled and deveined, tails on
  • 2 Tbsp olive oil
  • 3 tsp minced garlic
  • 1 tsp Italian seasoning
  • 1/4 cup Parmesan cheese grated
  • Salt and pepper to taste
  • Fresh lemon juice to taste
  • 2 Tbsp chopped parsley

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine shrimp, olive oil, minced garlic, Italian seasoning, and Parmesan cheese. Season with salt and pepper. Toss until shrimp are well coated.
  • Line a baking sheet with parchment paper. Arrange the shrimp in a single layer and roast in the oven for about 10 minutes, until pink, opaque, and cheese is golden brown.
  • Remove from oven, squeeze fresh lemon juice over the shrimp, and garnish with chopped parsley.
  • Serve immediately as an appetizer or with pasta, rice, or salad for a main dish.

Notes

For extra spice, add a pinch of red pepper flakes to the shrimp mixture before roasting.
