Ingredients
  

  • 4 slices thick-cut bacon chopped into ½-inch pieces
  • 1 small green cabbage about 1.5 lbs, thinly sliced
  • 1 medium yellow onion thinly sliced
  • 3 cloves garlic minced
  • 1 tbsp olive oil or butter optional, for extra richness
  • ½ tsp kosher salt plus more to taste
  • ¼ tsp black pepper freshly ground
  • pinch red pepper flakes optional
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Heat a large skillet over medium heat and add chopped bacon. Cook until golden and crispy, about 8 minutes, pouring off excess fat if needed.
  • Add the sliced onion to the skillet with bacon drippings. Cook for 3–4 minutes until translucent and starting to caramelize.
  • Stir in minced garlic and red pepper flakes, cooking for just 30 seconds until fragrant, being careful not to burn.
  • Increase heat to medium-high, add cabbage and optional olive oil or butter. Let sit for a minute to brown, then toss and repeat until cabbage is tender-crisp, about 5–7 minutes.
  • Season with salt and pepper, garnish with parsley, and serve immediately for best texture and flavor.

Notes

For an extra tangy kick, finish with a splash of apple cider vinegar. Leftovers keep up to 4 days in the fridge; reheat gently in a skillet.
