Ingredients
  

  • 6 slices bologna
  • 4 slices bread
  • 2 tbsp mayonnaise
  • 2 thick slices tomato
  • 2 slices cheddar cheese
  • Cooking spray

Instructions
 

  • Prepare the Bread:
  • Spread 1 tbsp of mayonnaise on one side of each of the two slices of bread. Add a thick slice of tomato and a slice of cheddar cheese on top of the mayonnaise.
  • Fry the Bologna:
  • Heat a skillet over medium-high heat, spraying it with cooking spray. Cut an "X" into the center of each bologna slice to prevent curling, then fry each slice for 3-4 minutes per side until caramelized.
  • Assemble the Sandwich:
  • Place three slices of fried bologna on each prepared bread slice with tomato and cheese.
  • Toast the Sandwich:
  • Top the sandwiches with the remaining bread slices. Toast each side in the skillet until golden brown, or use a sandwich press.
  • Serve:
  • Remove from the skillet, cut in half if desired, and serve hot.

Notes

Experiment with different bread types, cheeses, or additional toppings like pickles or lettuce for variation.
