  • 2 tablespoons chili powder recommend McCormick or your favorite brand
  • 1 tablespoon paprika smoked paprika adds a lovely depth
  • 1 tablespoon ground cumin freshly ground for best aroma
  • 1 teaspoon sea salt adjust to taste; coarse or fine works
  • 1 teaspoon garlic powder or granulated garlic
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano Mexican oregano if you can find it
  • 1/2 teaspoon black pepper freshly cracked
  • 1/4–1/2 teaspoon cayenne pepper for mild to medium heat
  • ground chipotle if you crave smokiness
