2 to 3green onionssliced (For fresh topping)
Instructions
Preheat Oven: Preheat your oven to 400°F (200°C).
Ensures the nachos cook evenly and the cheese melts perfectly.
Cook the Ground Beef: In a large skillet over medium-high heat, cook 1 lb ground beef and 1/2 diced yellow onion until the beef is browned and the onion is translucent, about 8 minutes.
Break up the meat into small crumbles as it cooks.
Drain Excess Fat: Drain any excess fat from the skillet.
Helps keep the nachos from becoming too greasy.
Season the Beef: Return the beef to the skillet, add 1 packet taco seasoning, and 3/4 cup water. Simmer until most of the liquid has evaporated, about 5 minutes.
Allows the beef to soak up all the flavorful seasoning.
Prepare the Baking Sheets: Line two large baking sheets with parchment paper.
Makes for easier cleanup and prevents the chips from sticking.
Layer the Chips: Spread a generous layer of tortilla chips across each baking sheet.
Provides a solid base for the toppings.
Add the Refried Beans: Dollop spoonfuls of refried beans over the chips on both baking sheets.
The beans will spread out as they heat in the oven.
Add the Ground Beef: Spoon half of the seasoned ground beef mixture over the chips and beans on each baking sheet.
Distribute evenly to ensure every chip gets some of the savory topping.
Sprinkle the Cheese: Generously sprinkle shredded cheese over the top of the chips, beans, and beef.
A combination of cheddar and Monterey Jack is recommended.
Bake in the Oven: Bake for 15 minutes, or until the cheese is fully melted and bubbly.
Monitor to prevent the chips from burning.
Add Fresh Toppings: Immediately sprinkle diced Roma tomatoes and sliced green onions over the top.
Adds a burst of color and a refreshing crunch.
Serve Immediately: Serve the nachos hot, either straight from the baking sheets or on a large platter.
Best served hot for optimal taste and texture.
Notes
For a spicier kick, add diced jalapeños or hot sauce. Customize with your favorite toppings like guacamole, sour cream, and salsa.
