Ingredients
  

  • 1 pound ground beef 85–90% lean recommended; can substitute ground turkey or chicken
  • 1 can sloppy joe sauce about 15–16 oz (425–454 g), such as Manwich Original or your favorite brand
  • 2-3 tablespoons ketchup or barbecue sauce for a smokier flavor
  • 6-8 hamburger buns regular, brioche, or potato buns
  • sliced pickles optional, for serving
  • shredded cheddar or American cheese optional, for serving
  • red pepper flakes or hot sauce optional, for a little heat
  • finely chopped onion or bell pepper optional, sauté before adding the beef if using

Instructions
 

  • Place a large skillet over medium-high heat. Add the ground beef, breaking it up with a wooden spoon or spatula. Cook for 6–8 minutes, stirring occasionally, until the meat is browned and no pink remains. Use a wide skillet so the meat has room to spread out and brown instead of steam.

  • If the ground beef has released a lot of grease, carefully tilt the pan and spoon or pour off most of the fat into a heat-safe container. Leave just a thin coating in the pan for flavor.

  • Reduce the heat to medium-low. Pour the canned sloppy joe sauce over the cooked beef. Stir in 2 tablespoons of ketchup to start. Taste and add up to 1 more tablespoon of ketchup if you prefer it sweeter or more tangy. You can replace some or all of the ketchup with barbecue sauce for a smokier flavor.

  • Let the mixture simmer gently for about 5–8 minutes, stirring occasionally, until the sauce thickens and clings to the meat. You want a loose but spoonable texture—not soupy and not dry. If it looks too thin, simmer a few extra minutes; if it gets too thick, stir in a tablespoon or two of water.

  • While the filling simmers, lightly toast the hamburger buns. Place them cut-side down in a dry or lightly buttered skillet for 1–2 minutes, or toast in a 350°F (175°C) oven for about 5 minutes. Toasting helps keep the buns from getting soggy.

  • Spoon a generous amount of sloppy joe filling onto each bun. Top with sliced pickles, shredded cheese, and a sprinkle of red pepper flakes or hot sauce if desired. Serve hot with simple sides like chips, carrot sticks, or a salad.

Notes

For fattier beef (around 80/20), drain well so the filling isn’t greasy. For very lean meat, add a teaspoon of oil to the skillet before browning. Taste before adding extra salt—most canned sloppy joe sauces are already seasoned. To stretch the recipe, you can stir in a drained can of lentils or finely chopped sautéed mushrooms. Leftover filling reheats well on the stove or in the microwave and can be frozen for 2–3 months.
