EASY No-Bake Chocolate Oat Bars

Ingredients
  

  • 1 cup butter
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter

Instructions
 

  • Grease a 9×9 inch square pan to prevent sticking.
  • In a large saucepan, melt butter over medium heat. Add brown sugar and vanilla; stir until smooth. Mix in oats, cooking on low for 2-3 minutes until blended.
  • Press half the oat mixture into the prepared pan to form the base. Set aside the rest for the topping.
  • Melt chocolate chips and peanut butter in a small saucepan over low heat, stirring until smooth. Pour over the oat crust and spread evenly.
  • Crumble the remaining oat mixture over the chocolate layer, pressing gently to adhere.
  • Cover and refrigerate for 2-3 hours or overnight to set.
  • Bring to room temperature before cutting into bars to ensure clean slices.

Notes

For a variation, add a handful of chopped nuts or dried fruit to the oat mixture for added texture.
