  • 1 lb ground beef
  • 1 medium onion chopped
  • 1 green bell pepper chopped
  • 1 can 10.5 oz cream of mushroom soup
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cups cooked white rice
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley chopped, optional for garnish

Instructions
 

  • Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • Cook Beef and Vegetables: In a large skillet, cook 1 lb ground beef over medium heat until browned. Add 1 chopped onion and 1 chopped green bell pepper, cooking until softened. Drain any excess fat.
  • Combine Ingredients: In a large mixing bowl, combine the cooked beef mixture with 1 can cream of mushroom soup, 1 can cream of chicken soup, 1 cup sour cream, 1 1/2 cups cooked white rice, 1/2 teaspoon garlic powder, salt, and pepper. Mix until well combined.
  • Assemble the Casserole: Pour the mixture into the prepared baking dish. Spread it out evenly, and sprinkle 1 cup shredded cheddar cheese over the top.
  • Bake: Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Garnish and Serve: Garnish with chopped fresh parsley if desired. Serve hot.
