Ingredients
  

  • 1 lb ground beef 85% lean
  • 1 tbsp olive oil for cooking
  • 1 packet (1 oz) taco seasoning store-bought
  • 6 cups Doritos chips Nacho Cheese flavor
  • 4 cups shredded romaine lettuce washed and dried
  • 1 cup cherry tomatoes halved
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels fresh or thawed
  • ½ cup shredded cheddar cheese
  • ¼ cup sliced black olives
  • cup diced red onion
  • ½ cup sour cream
  • ½ cup salsa or pico de gallo
  • 3 tbsp fresh lime juice about 1 lime
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add ground beef, crumble it with a wooden spoon, and cook until no longer pink, about 6 minutes. Stir in taco seasoning and 1/4 cup water; cook 2 more minutes, then remove from heat.
  • Whisk together sour cream, salsa, and lime juice in a small bowl. Season with salt and pepper to taste for a tangy, creamy homemade dressing.
  • In a large salad bowl, combine shredded lettuce, black beans, corn, cherry tomatoes, diced red onion, olives, and cheddar cheese. Toss gently to mix the colors and flavors.
  • Fold the seasoned beef into the salad, ensuring it’s evenly distributed. Chill in the fridge for 5–10 minutes if you prefer a cooler dish.
  • Just before serving, crush most of the Doritos chips (leave some whole) and stir into the salad to maintain that signature crunch.
  • Top with the remaining Doritos and sprinkle fresh cilantro leaves over the salad. Serve immediately for best texture and flavor.

Notes

Store salad and chips separately in airtight containers. Salad stays fresh in the fridge for up to 2 days; add chips just before serving to keep them crunchy.
