  • Collect Ingredients: Gather all the ingredients, ensuring the pineapple chunks are frozen and ready for blending.
  • Combine Ingredients: In a blender, combine 2 cups frozen pineapple chunks, 2 tbsp lemon juice, 1/3 cup sugar, 1 cup vanilla ice cream, and 1/2 cup pineapple juice.
  • Blend: Blend until smooth and creamy, about 2-3 minutes, scraping down the sides as needed.
  • Transfer to Freezer Bag: Pour the blended mixture into a gallon-sized zip-top bag.
  • Freeze: Lay the bag flat in the freezer for about 1 hour, occasionally massaging the bag to ensure even freezing.
  • Check Consistency: After an hour, the mixture should be semi-frozen with a slushy texture. If not ready, allow more time in the freezer.
  • Fill Glasses: Scoop the mixture into glasses, filling them about three-quarters full.
  • Add Pineapple Juice: Pour a small amount of pineapple juice over each glass for the "float" effect.
  • Garnish and Serve: Garnish with a mint leaf or pineapple slice and serve immediately with a spoon and straw.

Notes
