Ingredients
  

  • 4 medium bone-in pork chops about 1-inch thick
  • 1/2 cup packed brown sugar
  • 2 tablespoons Dijon mustard (or stone-ground mustard)
  • 1 tablespoon soy sauce (or tamari)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground black pepper
  • pinch salt
  • 2 tablespoons olive oil or butter
  • 2 sprigs fresh rosemary optional garnish

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Pat pork chops dry and season lightly with salt and pepper on both sides.
  • Whisk together brown sugar, Dijon mustard, soy sauce, smoked paprika, and pepper in a bowl.
  • Heat oil in an oven-safe skillet over medium-high heat, sear chops 2 minutes per side until golden.
  • Brush half of the glaze on each chop, reserving the rest for later.
  • Transfer skillet to oven and bake for 12-15 minutes, brushing with remaining glaze halfway through.
  • Let chops rest 5 minutes before serving; garnish with rosemary if desired.

Notes

Use a meat thermometer to reach 145°F for juiciest results. Leftovers keep well in the fridge up to 3 days or freeze for 2 months.
