Crustless Spinach, Onion, and Feta Quiche

Ingredients
  

  • 1 medium onion diced
  • 6 ounces baby spinach fresh
  • 2 large eggs
  • 1/2 cup egg beaters liquid egg substitute
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • cayenne pepper pinch
  • 1 1/3 cups non-fat milk
  • 1/2 cup feta cheese crumbled

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Lightly grease a 10-inch quiche or pie dish with cooking spray or oil.
  • In a skillet over medium heat, sauté diced onion in a little oil until tender, about 5 minutes.
  • Add spinach and cook until just wilted, about 2–3 minutes. Set aside to cool slightly.
  • In a large bowl, whisk together eggs, egg beaters, flour, and baking powder.
  • Gradually whisk in milk and add a pinch of cayenne pepper.
  • Stir in the cooled onion and spinach mixture until evenly combined.
  • Pour into the prepared baking dish and spread evenly.
  • Sprinkle crumbled feta cheese over the top.
  • Bake for 25 minutes, or until the center is set and the edges are golden.
  • Let cool for 5 minutes before slicing. Serve warm or at room temperature.

Notes

Swap feta with goat cheese or add mushrooms and peppers for variation.
