Ingredients
  

  • 2 lbs boneless, skinless chicken thighs (or breasts), patted dry
  • 1 large yellow onion, thinly sliced Vidalia adds sweetness
  • 3 cloves garlic, minced fresh gives a sharper kick
  • 4 cups low-sodium chicken broth homemade or store brand
  • 1/4 cup all-purpose flour (or gluten-free baking mix)
  • 1/4 cup unsalted butter (or olive oil for dairy-free)
  • 1 tsp dried thyme (swap in 1 Tbsp fresh if you have it)
  • 1 tsp dried rosemary, crushed
  • 1/2 tsp Salt & pepper adjust to taste
  • 1/2 cup plain whole-milk Greek yogurt (for extra creaminess)
  • 1 cup sliced mushrooms for earthiness
  • chopped parsley or chives Garnish

Instructions
 

  • Pat chicken dry and sprinkle with salt, pepper, thyme, and rosemary. Brown chicken in butter, 2 minutes per side.
  • Saute onions and garlic, then transfer to slow cooker.
  • Place browned chicken atop onions, pour in broth, and add mushrooms if desired.
  • Cook on Low for 6 hours (or High for 3–4).
  • Whisk flour with broth, stir into slow cooker, let simmer until thickened.
  • Stir in Greek yogurt, adjust seasoning, and sprinkle with parsley or chives. Serve over preferred base.

Notes

Browning the chicken adds flavor. Adjust cook time for different slow cooker models. Variations include Italian Style, Dairy-Free, Spicy Twist, Mustard Kick, Veggie Boost, and Pork Option.
