Ingredients
  

  • 2 pounds chicken breasts boneless, skinless
  • 10.5 oz cream of chicken soup
  • 10.5 oz cream of mushroom soup
  • 1 cup sour cream or Greek yogurt
  • 2 cups shredded cheddar cheese
  • 32 oz frozen Tater Tots
  • 1 medium yellow onion diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika optional
  • salt and pepper to taste
  • fresh parsley or chives optional garnish

Instructions
 

  • Lightly coat the slow cooker insert with nonstick spray or butter for easy cleanup.
  • Place chicken breasts in the cooker, add soups, sour cream, diced onion, and seasonings; stir to combine.
  • Cover and cook on LOW for 4 hours or on HIGH for 2½ hours, until chicken is tender and easily shredded.
  • Shred the chicken with forks, then stir in shredded cheddar cheese until melted and smooth.
  • Arrange frozen Tater Tots in a single layer over the cheesy chicken mixture.
  • Cook uncovered on HIGH for 1 hour, until Tater Tots are golden and crispy; broil briefly if desired.
  • Sprinkle chopped parsley or chives over the top, season to taste, and serve hot.

Notes

Leftovers stay fresh in the fridge for up to 4 days; freeze portions for up to 3 months. For extra crispiness, broil the top for 2–3 minutes.
