Ingredients
  

  • 3-4 boneless, skinless chicken breasts
  • 1 packet low sodium taco seasoning
  • 1 packet ranch seasoning mix
  • 2 cups low sodium chicken broth
  • Shredded lettuce for serving
  • Pico de gallo or salsa for serving
  • Light or fat-free sour cream for serving
  • Taco shells for serving

Instructions
 

  • Place the chicken breasts in the Crock-Pot.
  • Sprinkle the taco seasoning and ranch seasoning over the chicken.
  • Pour the chicken broth into the Crock-Pot, ensuring the chicken is mostly submerged.
  • Cover and cook on low for 4-6 hours, until the chicken is tender and easily shredded.
  • Remove the chicken and shred it with a fork. Return the shredded chicken to the Crock-Pot and stir to soak up the broth.
  • Serve the shredded chicken in taco shells, topped with shredded lettuce, pico de gallo or salsa, and a dollop of sour cream.

Notes

For a spicier version, add chopped jalapeños or a dash of hot sauce.
