Creamy Ranch Chicken Tater Tot Bake

Ingredients
  

  • 2 lbs boneless, skinless chicken breasts cut into bite-size pieces
  • 32 oz frozen tater tots
  • 16 oz sour cream
  • 10.5 oz cream of chicken soup
  • 1 oz ranch dressing mix
  • 2 cups shredded cheddar cheese
  • 1 cup crispy bacon crumbled (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with olive oil.
  • Season the chicken pieces with salt and pepper. Heat a skillet over medium-high heat, add olive oil, and brown the chicken for 5-7 minutes until cooked through. Set aside.
  • In a large mixing bowl, combine sour cream, cream of chicken soup, and ranch dressing mix. Stir until smooth.
  • Spread half of the frozen tater tots in the baking dish. Evenly distribute the cooked chicken over the tater tots.
  • Pour the creamy ranch mixture over the chicken, spreading it evenly.
  • Sprinkle shredded cheddar cheese on top. Add crumbled bacon, if desired.
  • Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until the top is bubbly and golden.
  • Let the casserole rest for 5 minutes before serving. Garnish with chopped fresh parsley.

Notes

For a spicier kick, add a dash of hot sauce or cayenne pepper to the creamy ranch mixture.
