32Ritz crackerscrushed
1/2cuponionchopped
4ozsharp cheddar cheeseshredded

1 1/2lbsground beef
1/2cupketchup
1/2cupbrown sugar

Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, beat eggs until frothy. Add milk, crushed Ritz crackers, onion, cheese, salt, and pepper. Mix well.
Add ground beef to the mixture and combine gently without overmixing. Shape into a loaf and place in a greased loaf pan.
Bake in preheated oven for 45 minutes.
Mix ketchup, brown sugar, and mustard in a small bowl. After 30 minutes of baking, apply half of the topping over the meatloaf and bake for another 10 minutes.
Remove, add remaining topping, and bake for an additional 5-10 minutes. Allow to rest for 10 minutes before serving.
Notes
For a spicier variation, add a dash of hot sauce to the topping mixture.
