Cracker Barrel Meatloaf

Ingredients
  

  • 2 eggs
  • 2/3 cup milk
  • 32 Ritz crackers crushed
  • 1/2 cup onion chopped
  • 4 oz sharp cheddar cheese shredded
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 lbs ground beef
  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 1 tsp mustard

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, beat eggs until frothy. Add milk, crushed Ritz crackers, onion, cheese, salt, and pepper. Mix well.
  • Add ground beef to the mixture and combine gently without overmixing. Shape into a loaf and place in a greased loaf pan.
  • Bake in preheated oven for 45 minutes.
  • Mix ketchup, brown sugar, and mustard in a small bowl. After 30 minutes of baking, apply half of the topping over the meatloaf and bake for another 10 minutes.
  • Remove, add remaining topping, and bake for an additional 5-10 minutes. Allow to rest for 10 minutes before serving.

Notes

For a spicier variation, add a dash of hot sauce to the topping mixture.
