Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, beat the eggs. Mix in the milk and crushed Ritz crackers. Stir in the chopped onion and shredded cheddar cheese.
Add the ground beef, salt, and pepper. Mix well until all ingredients are combined.
Shape the mixture into a loaf and place it in an 8x8-inch baking pan.
Bake the meatloaf for 45-60 minutes, or until thoroughly cooked.
While the meatloaf is baking, prepare the topping by combining ketchup, brown sugar, and mustard in a small bowl.
After 30 minutes of baking, spoon half of the topping over the meatloaf and return it to the oven for an additional 10 minutes. Apply the remaining topping and bake for another 5-10 minutes.
Allow the meatloaf to rest for a few minutes before slicing and serving.
