Ingredients
  

  • 3 cups cooked shredded chicken
  • 8 slices bacon cooked crisp and crumbled
  • 1 can cream of chicken soup
  • 1/2 cup whole milk Greek yogurt
  • 1 packet ranch seasoning mix
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese divided
  • 1 small yellow onion finely diced
  • 2 cloves garlic minced
  • 1 cup frozen peas and carrots
  • 1/4 cup chopped fresh parsley for garnish

Instructions
 

  • Preheat your oven to 350°F and grease a 9x13-inch baking dish.
  • Whisk together cream of chicken soup, Greek yogurt, sour cream, ranch seasoning, garlic, and onion in a bowl until smooth.
  • Fold in chicken, bacon, peas and carrots, and 1 1/2 cups of cheddar cheese. Stir gently to coat evenly.
  • Spread the mixture in the baking dish, top with remaining cheese and bacon. Bake for 20-25 minutes until bubbly and golden.
  • Let the casserole rest for 5 minutes, then garnish with parsley before serving.

Notes

Use room-temperature dairy to avoid lumps. If Greek yogurt is too thick, add a splash of milk for smoother texture.
