Ingredients
  

  • 300 grams sirloin steak thinly sliced; can use rib eye, flank, or blade steak
  • 1/2 white onion sliced thinly; can use yellow onion
  • 4-5 slices ginger
  • 3 cloves garlic minced or thinly sliced
  • 1 stalk green onion cut into 2-inch pieces
  • 1 tablespoon soy sauce for marinade
  • 1/2 tablespoon Shaoxing cooking wine for marinade
  • 2 tablespoons water for marinade
  • 1 teaspoon sesame oil for marinade
  • 1 teaspoon cornstarch to be added after marinating
  • 1 tablespoon oil to be added after marinating
  • 1 tablespoon low-sodium soy sauce for sauce
  • 1 tablespoon cornstarch for sauce
  • 1 teaspoon sugar for sauce
  • 1 1/2 tablespoons oyster sauce for sauce
  • 1/2 tablespoon hoisin sauce for sauce
  • 1 teaspoon sesame oil for sauce
  • 1/2 tablespoon Shaoxing cooking wine or dry sherry/rice wine, for sauce
  • 1 teaspoon dark soy sauce for color, can be substituted with regular soy sauce
  • 1/2 cup water for sauce

Instructions
 

  • Slice the onion, mince or slice the garlic, slice the ginger, and cut the green onion into 2-inch pieces.
  • Thinly slice the beef against the grain. In a bowl, mix soy sauce, Shaoxing wine, water, and sesame oil. Add beef and marinate for 15 minutes. After marinating, mix in cornstarch, then add oil and mix well.
  • In a small bowl, whisk together all sauce ingredients until smooth and set aside.
  • Heat oil in a large pan or wok over high heat. Add beef and sear for 2-4 minutes until almost fully cooked. Remove from pan and set aside.
  • In the same pan, add oil if needed and sauté ginger slices until slightly browned. Add garlic and onions, stir-frying until softened and browned.
  • Push onions aside, stir the sauce, and pour into the pan. Stir until thickened. Add beef back in, mix well, and stir in green onions. Cook for 1 more minute.
  • Plate the stir fry and serve hot over steamed rice.

Notes

For a spicier kick, add a dash of chili flakes or fresh sliced chilies. Serve with steamed white or jasmine rice for the best experience.
