Ingredients

  • 1 lb chicken breasts or thighs cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 12 oz egg noodles
  • 1/4 cup unsalted butter
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley optional
  • 1 lemon cut into wedges, optional

Instructions

  • Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.
  • While the noodles are cooking, heat the olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt, pepper, garlic powder, and onion powder. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  • In the same skillet, reduce the heat to medium and add the butter. Allow it to melt, then return the cooked chicken to the skillet. Toss to coat the chicken in the melted butter.
  • Add the cooked noodles to the skillet with the chicken and butter. Toss to combine, ensuring the noodles are well-coated with the butter sauce. Sprinkle with grated Parmesan cheese and chopped parsley, if using. Serve immediately with lemon wedges on the side, if desired.

Notes

For added flavor, try incorporating a dash of red pepper flakes or a sprinkle of Italian seasoning.
