Ingredients
  

  • 2 tablespoons extra-virgin olive oil (sub: avocado oil)
  • 3 cloves garlic, minced (fresh adds punch; jarred works in a pinch)
  • 1 teaspoon kosher salt (reduce to ¾ teaspoon for table salt)
  • ½ teaspoon freshly cracked black pepper
  • 1 teaspoon dried oregano (or 1 tablespoon fresh, chopped)
  • 1 teaspoon paprika (smoked gives a deeper flavor)
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach or kale, roughly chopped (optional, for color and nutrients)
  • ¼ cup low-sodium chicken broth or dry white wine (deglazes pan)
  • Fresh parsley or basil, chopped (for garnish)

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking dish with parchment for easy cleanup.
  • In a large bowl, whisk olive oil, minced garlic, salt, pepper, oregano, paprika, lemon zest, and juice.
  • Add chicken breasts to the marinade, toss until coated. Let it rest for 10 minutes at room temperature.
  • Arrange chicken in the pan, add tomatoes and spinach. Pour in broth or wine. Bake for 20 minutes.
  • Check internal temperature. Broil for char if desired. Rest before serving.
  • Let the chicken rest, then garnish with parsley or basil before serving.

Notes

Less lemon zest can be more; rest time makes the chicken juicier. Top with pan juices for extra flavor. Swap cherry tomatoes for heirloom slices in summer.
