Ingredients
  

  • pounds boneless, skinless chicken breasts or thighs for extra juiciness
  • 3 tablespoons extra-virgin olive oil or avocado oil
  • 2 cloves garlic minced (about 1 teaspoon; fresh is best)
  • 1 large lemon zest and juice about 2 tablespoons juice
  • 1 teaspoon kosher salt adjust to taste
  • ½ teaspoon black pepper freshly ground
  • 1 teaspoon smoked paprika or sweet paprika
  • 1 teaspoon dried oregano or 1 tablespoon chopped fresh oregano
  • pinch of red pepper flakes for a little kick
  • Fresh parsley or cilantro for garnish

Instructions
 

  • Whisk olive oil, minced garlic, lemon zest and juice, salt, pepper, paprika, oregano, and red pepper flakes. Add chicken, coat, and let rest for at least 10 minutes.
  • Warm a large cast-iron skillet or nonstick pan. Drizzle oil, swirl to coat.
  • Cook chicken undisturbed for 4–5 minutes until golden brown underneath.
  • Turn chicken over, reduce heat, and cook until internal temperature reaches 165°F (74°C).
  • Let chicken rest, then garnish with fresh parsley or cilantro before serving.

Notes

Patience pays off with juicy chicken. Marinate overnight for more flavor. Adjust heat if chicken sticks. Add extra lemon for tanginess.
