Cherry Fruit Recipe (Fresh Cherry Parfait Dessert)

A light, fresh layered cherry parfait-style dessert made with juicy sweet cherries, creamy Greek yogurt and whipped cream, plus a crunchy granola or cookie layer. No-bake, flexible, and perfect for summer.

Ingredients
  

  • 3 cups fresh sweet cherries pitted and halved; Bing, Rainier, or any sweet variety
  • 1-2 tablespoons lemon juice freshly squeezed
  • 2-3 tablespoons honey or maple syrup adjust to taste depending on cherry sweetness
  • 1 teaspoon vanilla extract for cherry layer
  • 1 pinch fine sea salt enhances cherry flavor
  • 1 cup plain Greek yogurt whole milk for extra creaminess (2% optional)
  • 1/2 cup heavy cream or coconut cream whipped lightly to very soft peaks
  • 2-3 tablespoons powdered sugar or honey for sweetening the yogurt layer
  • 1 teaspoon vanilla extract for yogurt layer
  • 1 cup granola, crushed graham crackers, or crumbled shortbread cookies for the crunch layer; use your preferred option
  • 1 tablespoon melted butter optional; best if using graham crackers or cookies
  • 1 tablespoon chopped nuts almonds, pistachios, or pecans; optional, toasted
  • extra fresh cherries pitted and halved, for garnish (optional)
  • lemon zest or orange zest for garnish (optional)
  • honey or dark chocolate for drizzling on top (optional)
  • fresh mint leaves for garnish (optional)

Instructions
 

  • Wash the cherries well and pat them dry. Pit and halve the cherries and place them in a medium bowl.

  • Add the lemon juice, honey or maple syrup, vanilla extract, and a pinch of fine sea salt to the bowl of cherries. Gently toss to coat and let sit at room temperature for 10–15 minutes, until the cherries release some juices and become glossy and syrupy.

  • In a bowl, whisk the Greek yogurt with vanilla extract and powdered sugar or honey until smooth. In a separate bowl, whisk the heavy cream or coconut cream to very soft peaks. Gently fold the whipped cream into the yogurt mixture until combined. Taste and adjust sweetness as needed.

  • If using granola, use as-is or gently crush it with your hands. If using graham crackers or shortbread cookies, crush them in a zip-top bag with a rolling pin or the bottom of a glass. Stir in chopped nuts if using, and melted butter if you want a richer, more crust-like texture.

  • Choose individual glasses, jars, small bowls, or one medium glass dish (such as an 8×8-inch dish). Make sure the containers are clean and dry; clear glass shows off the layers best.
  • Spoon a layer of macerated cherries with some of their syrup into the bottom of each glass. Add a layer of the crunch mixture, then a generous spoonful of the creamy yogurt mixture. Repeat the layers—cherries, crunch, cream—until near the top of the glass, finishing with a layer of cream.

  • Cover and refrigerate for at least 30 minutes and up to 4 hours to let the flavors meld and the layers settle. For maximum crunch, assemble closer to serving time.
  • Just before serving, top each parfait with extra fresh cherries, a little lemon or orange zest, and a drizzle of honey or melted dark chocolate if desired. Garnish with a mint leaf and serve chilled.

Notes

Fun variations: (1) Chocolate Cherry Dream – Add 2 tablespoons cocoa powder and extra sweetener to the yogurt layer, and sprinkle mini chocolate chips between layers. (2) Cherry Cheesecake Cups – Replace half the Greek yogurt with cream cheese and use graham crackers for the crunch. (3) Dairy-Free Delight – Use coconut yogurt and coconut cream, skip the butter, and top with toasted coconut. (4) Breakfast Cherry Parfait – Use only lightly sweetened yogurt (no cream), granola instead of cookies, and reduce sweetener in the cherries by half. (5) Cherry Almond Crunch – Add 1/2 teaspoon almond extract to the cherries and use toasted sliced almonds in the crunch. (6) Boozy Version – Stir 1–2 tablespoons kirsch or amaretto into the cherries. Storage: Assembled parfaits keep covered in the fridge up to 24 hours (the crunch softens over time). Store extra crunch mixture in an airtight container at room temperature for 3–4 days, and macerated cherries in the fridge for 2–3 days. For best texture, keep components separate and assemble 30–60 minutes before serving.
