Ingredients

  • 3 cups mashed potatoes chilled
  • 1 cup shredded cheddar cheese
  • 1 large egg
  • ¼ cup chives chopped
  • ¼ cup all-purpose flour
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese
  • Cooking spray or butter for greasing the muffin pan

Instructions

  • Prep the Oven and Pan: Preheat oven to 400°F (200°C) and generously grease a mini muffin pan with butter or cooking spray.
  • Mix Ingredients: In a large bowl, combine chilled mashed potatoes, cheddar cheese, chives, flour, garlic powder, salt, and pepper; add egg and mix until well combined.
  • Form the Puffs: Shape the potato mixture into 1-inch balls, roll in grated Parmesan, and place in the prepared muffin pan, pressing gently into shape.
  • Bake: Bake in the preheated oven for 15-20 minutes until edges are golden brown and crispy.
  • Cool and Serve: Let the puffs cool in the pan for a few minutes, then serve warm as an appetizer, side dish, or snack.

Notes

  • Add-Ins: Enhance flavor by adding crumbled bacon, diced jalapeños, or a blend of cheeses like mozzarella or Gouda.
  • Substitutions: Swap half the mashed potatoes with mashed cauliflower for a healthier version or use low-fat cheese.
  • Freezing: These puffs freeze well; reheat in the oven to restore their crispiness.
  • Consistency: Ensure mashed potatoes are firm to help the puffs hold their shape during baking.
