Cajun Chicken And Broccoli Alfredo

Ingredients
  

  • 2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 lb penne pasta
  • 3 cups broccoli florets
  • 2 tbsp unsalted butter
  • 3 tsp minced garlic
  • cup white cooking wine
  • 2 cups heavy whipping cream
  • 2 cups shredded Parmesan cheese
  • Salt and pepper to taste

Instructions
 

  • Heat 2 tbsp olive oil in a skillet over medium-high heat.
  • Add the chicken pieces, seasoning with 2 tbsp Cajun seasoning, salt, and pepper.
  • Sauté until the chicken is cooked through, about 7-8 minutes. Set aside.
  • Cook 1 lb penne pasta in boiling water according to the package instructions. Drain and set aside.
  • Steam 3 cups broccoli florets until tender but still crisp, about 5-7 minutes.
  • In a saucepan over medium heat, melt 2 tbsp unsalted butter.
  • Add 3 tsp minced garlic and sauté for 30 seconds until fragrant.
  • Pour in ⅓ cup white cooking wine and cook until reduced by half.
  • Whisk in 2 cups heavy whipping cream, cooking until the sauce thickens slightly.
  • Stir in 2 cups shredded Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  • In a large pot or mixing bowl, combine the cooked pasta, broccoli, and chicken.
  • Pour the Alfredo sauce over the mixture and toss to combine thoroughly.
  • Serve immediately while hot and creamy, garnished with additional Parmesan or fresh herbs if desired.

Notes

For a spicier version, increase the Cajun seasoning or add red pepper flakes. To lighten the dish, substitute half-and-half for heavy cream.
