Ingredients
  

  • 4 boneless, skinless chicken breasts Large size for stuffing
  • 3 cups broccoli florets Steamed and chopped
  • 1 1/2 cups shredded cheddar cheese
  • 2 oz cream cheese Room temperature
  • 1 tablespoon chopped fresh chives Or other fresh herbs
  • to taste garlic powder, cumin, or other spices
  • 1/4 cup olive oil Divided for cooking
  • to taste salt and pepper

Instructions
 

  • Preheat the oven to 400°F (200°C) to ensure it's ready for finishing the chicken.
  • Place the broccoli florets in a microwave-safe bowl with 2 tablespoons of water. Cover and microwave for 2 minutes until tender. Drain and chop into small pieces.
  • In a bowl, mix together the chopped broccoli, shredded cheddar cheese, cream cheese, chives, salt, and pepper until well combined.
  • Using a sharp knife, cut a deep pocket into each chicken breast, being careful not to cut all the way through.
  • Divide the broccoli-cheese mixture evenly among the chicken breasts, pressing the stuffing firmly into each pocket.
  • Season the outsides of the chicken breasts with garlic powder, salt, pepper, and any additional spices like cumin or paprika.
  • Heat olive oil in an ovenproof skillet over medium heat. Sear the chicken for 3 minutes per side until golden brown.
  • Transfer the skillet to the oven and bake for 10-15 minutes, or until the thickest part of each chicken breast reaches 165°F (74°C).
  • Let the chicken rest for a few minutes before serving. Serve warm with a side of roasted vegetables or a fresh salad.

Notes

For an extra crispy exterior, broil the chicken for the last 2-3 minutes of baking. Serve with mashed potatoes or a simple side salad for a complete meal.
