Ingredients

  • 4 large boneless skinless chicken breasts: The main protein, providing a hearty base for the stuffing.
  • 3 cups broccoli florets: Adds a healthy vibrant vegetable component to the stuffing.
  • 1 ½ cups shredded cheddar cheese: Provides a creamy cheesy filling that complements the broccoli.
  • 2 oz cream cheese at room temperature: Adds creaminess to the stuffing mixture.
  • 1 tablespoon chopped fresh chives or other fresh herbs: Enhances the flavor with fresh herbaceous notes.
  • Garlic powder cumin, or other spices: Used to season the chicken for added flavor.
  • ¼ cup olive oil divided: Used for searing the chicken to create a crispy exterior.
  • ¼ teaspoon salt for the stuffing: Essential for seasoning the stuffing.
  • ¼ teaspoon pepper for the stuffing: Adds a mild heat and balances the flavors in the stuffing.

Instructions

  • Place 3 cups of broccoli florets in a microwave-safe bowl. Add 2 tablespoons of water, cover with a plate, and microwave on high for 2 minutes to steam. Drain, chop into small pieces, and set aside.
  • Transfer the chopped broccoli to a bowl. Add 1 ½ cups shredded cheddar cheese, 2 oz cream cheese, 1 tablespoon chopped chives, ¼ teaspoon salt, and ¼ teaspoon pepper. Mix well to combine.
  • Preheat the oven to 400°F (200°C). Using a sharp knife, carefully cut a deep pocket lengthwise into each chicken breast, being careful not to cut through.
  • Stuff each chicken breast with the broccoli mixture, pressing the filling firmly into the pocket. Season the outside of the chicken with garlic powder, salt, pepper, and any other desired spices.
  • Heat 2 tablespoons of olive oil in each of two ovenproof skillets over medium heat. Sear two chicken breasts in each skillet for 3 minutes on one side until golden brown. Flip and sear the other side for 2-3 minutes.
  • Transfer the skillets to the preheated oven and bake for 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Remove from the oven and let the chicken breasts rest for a few minutes before serving to allow the juices to redistribute.

Notes

  • Vegetables: Add finely chopped bell peppers, spinach, or mushrooms to the stuffing for extra flavor.
  • Cheese: Substitute cheddar with mozzarella, gouda, or a cheese blend for different flavor profiles.
  • Spices and Herbs: Experiment with spices like paprika, cayenne pepper, or Italian seasoning for added depth.
  • Cream Cheese: Use reduced-fat cream cheese or Greek yogurt for a lighter option.
  • Dairy-Free: Use dairy-free cheese alternatives and a dairy-free cream substitute for a dairy-free version.
