Ingredients
  

  • 1½ pounds boneless chicken thighs trimmed of excess fat
  • 2 tablespoons unsalted butter or ghee or olive oil
  • 3 cloves garlic minced
  • 1 lemon zest and juice
  • 1 teaspoon dried oregano or 1 tablespoon fresh, chopped
  • ½ teaspoon dried thyme or fresh sprigs
  • ½ teaspoon paprika smoked or sweet
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley or cilantro
  • Optional veggies sliced bell peppers, cherry tomatoes, or asparagus

Instructions
 

  • Preheat your oven to 400°F and line a baking sheet with foil.
  • Melt butter with minced garlic in a saucepan. Stir in lemon zest, juice, oregano, thyme, paprika, salt, and pepper.
  • Pat chicken thighs dry and place skin-side up on the baking sheet. Brush with garlic butter sauce.
  • Toss optional veggies in olive oil, salt, and arrange around the chicken. Bake for 18-22 minutes.
  • Broil for a golden crust, then let rest before serving sprinkled with fresh parsley.

Notes

Let chicken sit at room temperature before baking for even cooking. Grass-fed butter enhances the flavor. To make it a complete meal, serve over rice, pasta, or roasted veggies.
