Ingredients
  

  • 4 cups Peaches sliced (fresh, canned, or frozen)
  • 1 cup Bisquick Mix
  • 1 cup milk
  • 1 cup Granulated sugar
  • 1/2 cup Butter melted
  • 1/2 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 1 tbsp Lemon juice

Instructions
 

  • Preheat your oven to 350°F. Grease a 9×9-inch baking dish with a bit of butter or cooking spray.
  • In a medium bowl, combine sliced fresh peaches, sugar, lemon juice, and a pinch of cinnamon. Stir gently until peaches glisten.
  • In a separate bowl, stir together Bisquick mix, sugar, and salt. Whisk in milk, eggs, melted butter, and vanilla until you have a smooth batter.
  • Pour half of the batter into your prepared dish. Spread it evenly. Spoon the peach mixture over the batter, then dollop the remaining batter on top.
  • Dust the top with sugar and cinnamon. Slide the dish into the oven and bake for 35–40 minutes, until the crust is golden and the peach juices bubble around the edges.
  • Let the cobbler rest for 5–10 minutes. Serve warm with vanilla ice cream or whipped cream for extra comfort.

Notes

Refrigerator: Cover the cooled cobbler tightly with foil or plastic wrap; refrigerate up to 3 days. Freezer: Portion into freezer-safe containers; freeze for up to 1 month. Thaw overnight in the fridge. Reheating: Warm single servings in the microwave for 30 seconds to 1 minute, or reheat a large dish at 325°F for about 10 minutes until heated through.
