Ingredients

  • 1.5 pounds ground beef 80/20 mix for juiciness; leaner beef works, too
  • 1 medium yellow onion finely chopped
  • 1 cup ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons brown sugar
  • 6 slices American cheese
  • Dill pickle slices for topping

Instructions

  • Heat a large skillet over medium-high heat. Add ground beef and cook until no pink remains. Drain excess fat.
  • Cook onion and bell pepper until softened. Stir in garlic.
  • Stir ketchup, mustard, brown sugar, vinegar, and Worcestershire sauce into the beef-veggie mixture. Simmer until the sauce thickens.
  • Place a slice of American cheese over each portion of sloppy joe in the skillet to melt.
  • Toast buns under the broiler until lightly golden.
  • Spoon beef onto bottom buns. Top with dill pickle slices and top buns.
  • Enjoy these sloppy joes straight away.

Notes

Tested with various ground-to-vegetable ratios for the richest flavor. Adjust brown sugar for more tang. Let the sauce simmer longer for a thicker texture.
