1large onionpeeled and sliced into rings
1cupbarbecue sauceyour favorite
2tbspolive oil
1tbspapple cider vinegar
2tspsmoked paprika
1tspgarlic powder
1tsponion powder

Instructions
Preheat oven to 375°F (190°C). Line a large baking sheet with aluminum foil.
In a small bowl, combine barbecue sauce, olive oil, apple cider vinegar, smoked paprika, garlic powder, and onion powder. Lightly season chicken thighs with salt and pepper.
Place chicken thighs skin-side down on the prepared baking sheet. Brush half of the barbecue sauce mixture over the chicken.
Layer onion rings on top of the chicken. Bake for 25 minutes. Flip chicken to skin-side up, apply remaining sauce, and continue baking for another 20-25 minutes or until the internal temperature reaches 165°F (75°C).
Broil for 3-4 minutes for extra caramelization, watching carefully to prevent burning.
Let the chicken rest for 5 minutes. Garnish with parsley if desired and serve warm with caramelized onions.
