BBQ Baked Chicken Thighs

Ingredients
  

  • 8 chicken thighs bone-in and skin-on
  • 1 large onion peeled and sliced into rings
  • 1 cup barbecue sauce your favorite
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and freshly ground black pepper to taste
  • chopped fresh parsley for garnish (optional)

Instructions
 

  • Preheat oven to 375°F (190°C). Line a large baking sheet with aluminum foil.
  • In a small bowl, combine barbecue sauce, olive oil, apple cider vinegar, smoked paprika, garlic powder, and onion powder. Lightly season chicken thighs with salt and pepper.
  • Place chicken thighs skin-side down on the prepared baking sheet. Brush half of the barbecue sauce mixture over the chicken.
  • Layer onion rings on top of the chicken. Bake for 25 minutes. Flip chicken to skin-side up, apply remaining sauce, and continue baking for another 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  • Broil for 3-4 minutes for extra caramelization, watching carefully to prevent burning.
  • Let the chicken rest for 5 minutes. Garnish with parsley if desired and serve warm with caramelized onions.

Notes

For a spicier kick, add a teaspoon of cayenne pepper to the barbecue sauce mixture.
