Instructions
Preheat your oven to 425°F (220°C).
Wash and trim the ends of the zucchinis. Slice into sticks, resembling French fries.
In a bowl, mix breadcrumbs, Parmesan, garlic powder, oregano, salt, and pepper. In a separate bowl, beat the eggs.
Dip each zucchini stick in the beaten eggs, then roll in the breadcrumb mixture, pressing gently to coat.
Line a baking sheet with parchment paper or lightly grease it. Arrange the coated zucchini sticks in a single layer, without touching.
Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
Cool slightly and serve warm with your choice of dipping sauce.
Notes
For extra crispiness, use panko breadcrumbs. Feel free to add a pinch of cayenne pepper for a spicy kick.
