Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick cooking spray.
In a bowl, combine the cream cheese, minced garlic, chopped chives, paprika, salt, and pepper. Blend until smooth and well combined.
Lay the chicken breasts in the prepared baking dish. Spread the cream cheese mixture evenly over each chicken breast.
Pour the chicken broth around the chicken in the dish and drizzle with olive oil.
Bake in the preheated oven for 25-30 minutes, or until the chicken is thoroughly cooked (internal temperature should reach 165°F or 75°C). For an optional cheese topping, add the shredded cheddar cheese during the last 5 minutes of baking.
Remove from the oven and let the chicken rest for a few minutes. Garnish with fresh parsley and serve hot.
