Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese softened
  • 1 clove garlic minced
  • 1 tbsp fresh chives chopped
  • 1 tsp paprika
  • salt and pepper to taste
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1/2 cup shredded sharp cheddar cheese optional for topping
  • fresh parsley for garnish, optional

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick cooking spray.
  • In a bowl, combine the cream cheese, minced garlic, chopped chives, paprika, salt, and pepper. Blend until smooth and well combined.
  • Lay the chicken breasts in the prepared baking dish. Spread the cream cheese mixture evenly over each chicken breast.
  • Pour the chicken broth around the chicken in the dish and drizzle with olive oil.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is thoroughly cooked (internal temperature should reach 165°F or 75°C). For an optional cheese topping, add the shredded cheddar cheese during the last 5 minutes of baking.
  • Remove from the oven and let the chicken rest for a few minutes. Garnish with fresh parsley and serve hot.

Notes

For added flavor, try using smoked paprika or adding a dash of cayenne pepper to the cream cheese mixture.
