Ingredients
  

  • 2 tablespoons butter softened
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice or to taste
  • 2 cloves garlic minced
  • 1 tablespoon parsley chopped
  • 1 teaspoon thyme
  • 1/8 teaspoon paprika
  • 1/8 teaspoon dill
  • 1/8 teaspoon salt
  • 2 fillets cod 8 oz each
  • 1 lemon sliced

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mix together the softened butter, olive oil, lemon juice, minced garlic, chopped parsley, thyme, paprika, dill, and salt.
  • Spread 1 to 2 teaspoons of the herb butter in the bottom of a small baking dish.
  • Place the cod fillets in the baking dish and spoon about 1 tablespoon of the herb butter over each fillet, ensuring they are well-coated.
  • Arrange the lemon slices around the cod fillets for extra flavor and moisture.
  • Place the baking dish in the preheated oven and bake for approximately 20 minutes, or until the cod flakes easily with a fork.
  • Remove from the oven and serve immediately. Enjoy with a side of roasted vegetables or rice for a complete meal.

Notes

For extra flavor, drizzle additional melted butter over the fish before serving. Pairs well with steamed asparagus or a light salad.
