Ingredients
  

  • 4 boneless skinless chicken breasts (1 1/2 lb total)
  • 1 tsp Italian seasoning mix
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Sea salt and pepper to taste
  • 12 asparagus stalks ends trimmed
  • 1 oz sun-dried tomatoes chopped
  • 4 slices mozzarella cheese
  • 1 tbsp olive oil

Instructions
 

  • Preheat Oven: Preheat oven to 400°F (200°C).
  • Season Chicken: Season both sides of the chicken breasts with Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
  • Create Pockets: Slice a pocket into each chicken breast lengthwise without cutting through.
  • Stuff Chicken: Roll 3 asparagus stalks and sun-dried tomatoes in a slice of mozzarella, then stuff into each chicken breast pocket. Secure with toothpicks.
  • Sear Chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken until golden brown, 3-5 minutes per side.
  • Bake Chicken: Transfer the skillet to the oven and bake for 15-20 minutes until cooked through. Remove toothpicks before serving.

Notes

Swap mozzarella for provolone or add a sauce like balsamic reduction for variation.
