Ingredients
  

  • 1 box spice cake mix Acts as the base and provides the spices and sweetness for the muffins.
  • 1 15-ounce can pure pumpkin puree Adds moisture, flavor, and natural sweetness to the muffins.

Instructions
 

  • Preparation: Preheat your oven to 350°F (175°C). Grease or line muffin cups with paper liners.
  • Mixing: In a large mixing bowl, combine the spice cake mix and the entire can of pumpkin puree. Stir until well incorporated. Optionally, you can add 1/2 cup of raisins or chopped nuts for extra texture and flavor.
  • Filling Muffin Cups: Using a spoon or a cookie scoop, drop heaping tablespoons of the batter into each muffin cup, filling them about two-thirds full.
  • Baking: Place the muffin pan in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Cooling and Serving: Once baked, remove the muffins from the oven and allow them to cool in the pan for 5 minutes. Transfer the muffins to a wire rack to cool completely before serving.

Notes

These muffins are naturally dense and moist. Feel free to add mix-ins like chocolate chips or nuts to enhance texture and flavor. Store any leftovers in an airtight container for up to three days at room temperature.
