PUMPKIN BREAD WITH BROWN SUGAR PECAN TOPPING

Ingredients:

2 cups all-purpose flour (240g)
1 ¼ teaspoon baking powder
½ teaspoon baking soda
1 ½ teaspoon cinnamon
½ teaspoon salt
½ teaspoon nutmeg
½ teaspoon cloves
¼ teaspoon ginger
1 teaspoon pumpkin pie spice
4 large eggs
15 ounce pumpkin puree
1 cup sugar
½ cup packed light brown sugar
1 teaspoon vanilla extract
⅔ cup vegetable oil (160ml)

Instructions:

-Preheat your oven to 350°F (175°C) and generously grease two 8×4 loaf pans.

-In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, nutmeg, cloves, ginger, and pumpkin pie spice.

-In a large bowl, beat the eggs, pumpkin puree, sugar, brown sugar, vanilla extract, and vegetable oil until well combined.

-Gradually add the flour mixture to the pumpkin mixture, beating until thoroughly combined.

-Evenly divide the batter into the prepared loaf pans.

Brown Sugar Pecan Topping:

-In a small bowl, mix together the brown sugar, flour, chopped pecans, and melted butter until a crumbly texture forms.

-Sprinkle this irresistible topping over both loaves.

Baking:

-Place the loaf pans in the preheated oven and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
