Ingredients:
1 3/4 cup shredded mozzarella cheese
1/4 cup coconut flour
3 tbsp cream cheese
2 eggs
Salt to taste
Filling:
Pepperoni, cheese. You could also add mushrooms, patted dry or Italian sausage.
Instructions:
-Preheat oven to 400°.
-Microwave cheese, flour and cream cheese for 30 seconds.
-Take out and stir. Micro for another 30 seconds and add eggs and salt.
-Mix well and cut dough into 4 pieces.
-Roll each piece into balls and flatten with your hands (I greased my hands for this).
-Lay on parchment paper on a pan and lay toppings of your choice on one side.
-Flip the other side of the dough over the top and press down sides. bake for 20-25 minutes or until edges are golden brown.
-Dip in sugar free/ low carb pizza sauce.
