EASY DOUBLE CHOCOLATE CHUNK MUFFINS RECIPE

Ingredients:

9 ½ ounces all-purpose flour about 2 cups

3 ½ ounces cocoa powder about ¾ cup

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon sea salt

1 ½ c sugar

2 extra-large eggs

8 tablespoons unsalted butter melted

1 c plain yoghurt or buttermilk

1 tablespoon vanilla extract

1 ½ c chocolate chunks or chocolate chips

Directions:

Add cocoa powder, flour, baking powder, baking soda, and salt into a large mixing bowl. Whisk until well mixed.

Add chocolate chunks and toss until well combined with the flour mixture.

Create a small well in the centre of the mixture, then add the eggs and vanilla extract. Whisk everything until well combined.

Add the remaining ingredients and stir until well combined.

Cover the batter, then place it inside the fridge to chill for at least an hour or overnight.

Prepare the oven and preheat to 218 degrees C or 425 degrees F.

Fill each muffin cup with the batter to about ¾ full only.

Place them inside the preheated oven and bake for about 10 minutes.

Turn the heat down to 350 and bake the muffins for another 30 minutes or until a toothpick comes out clean after inserting it in the middle.

Remove from the oven and allow them to cool for a few minutes at room temperature.
