Chicken and Potatoes with Dijon Cream Sauce

Ingredients:

2 tbsp olive oil

2 tbsp butter

½ lb. baby potatoes – halved or quartered as needed (they should be no large than 1-inch pieces)

3 medium boneless skinless chicken breasts

2 tsp Italian blend seasoning – OR Herbs de Provence

salt and pepper to taste

for the Dijon cream sauce

1 c chicken broth – I used low sodium

1 c heavy cream

1 tsp minced garlic

1 tbsp butter

2 tbsp Dijon mustard

¼ tsp cracked black pepper – or to taste

½ tsp salt – or to taste

Directions:

In a large mixing bowl, add the potatoes, chicken, and 1 tbsp of olive oil. Toss until well combined. Season with Italian seasoning, salt, and pepper.

Place a large skillet on the stove and turn the heat to medium.

Add butter and allow it to melt.

Add 1 tbsp of olive oil and allow it to become hot.

Add the chicken to one side of the skillet and potatoes on the other side. Cook for about 4 minutes on each side.

Remove the chicken and potatoes from the skillet onto a clean plate. Cover them with foil.

For the Sauce:

Add butter into the same skillet and allow it to melt.

Add the garlic and saute until aromatic.

Add the Dijon mustard and chicken broth, then stir until well blended.

Add the heavy cream, salt, and pepper. Stir until well blended.

To Assemble:

Put the potatoes and chicken back into the skillet, then toss until well coated by the delicious sauce.

Place the skillet inside the preheated oven and bake the potatoes and chicken for about 15 to 20 minutes or until done.

Remove from the oven, then spoon the delicious sauce on top.

Sprinkle freshly chopped herbs and black pepper on top.

Serve and enjoy!
